Holiday Recipe: Cranberry Apple Compote
Food is a key part of the Silverado experience. Delicious fare encourages residents to stay nourished and experience the joy of eating and socializing. Smell and taste can also be powerful memory triggers, awakening fond recollections of special meals and occasions. At no time is this more true than during the holidays, where feelings of joy and food are so intertwined.
Below is a cranberry apple compote, a great sauce to go over any of your favorite holiday entrées from turkey to holiday ham. You can also put it over a crostini with cream cheese for some easy and delicious appetizers.
2 ½ cup dried cranberries
1 ½ cup dried apple slices, halved
1 stick of cinnamon
5 whole cloves
A pinch of nutmeg (⅛ teaspoon)
3 bay leaves (or 1 dried bay leaf)
1 cup granulated sugar
¼ teaspoon kosher salt
4 cups port wine or cranberry juice
Combine all ingredients in a medium-size saucepan. Bring to a simmer. Cover partially, and simmer very slowly for 40 minutes. Uncover and simmer for 10 minutes longer or until the fruit is tender and the port is slightly reduced and thickened. Remove and discard bay leaves, clove and cinnamon stick.
